The Sabbath would begin on Friday evening at sundown, so I would think that the tours end on Fri. in the late afternoon. The religious service which is orthodox would begin in the early evening. The museum, gift shop and snack bar probably have the same hours, as well.

The South Africa Jewish Museum is open from Sunday to Thursday from 10am–5pm and Friday from 10am–2pm. We are closed on Saturdays and Jewish holidays.
