My version of honey toast is an easier one, where you don’t need to cut out cubes of bread and refill a bread box. We just score the fluffy toast so that the honey mixture can really soak in.

Divide the avocado mixture between the sourdough toast slices, spreading to cover. Top with halloumi and a drizzle of the hot honey from the pan. Sprinkle with chopped coriander and serve.
