Another indicator of ripeness found in the shape of your fruit is the crown. The crown of a pomegranate, or calyx, is located on the bottom of the fruit and resembles a crown (go figure).

To cut the pomegranate into segments, start by placing your pomegranate on the cutting board sideways. Find the end with the crown on it. This is the part of the fruit that comes up in little spikes.
