If you can’t find ’nduja, or are vegetarian ... in the butter until they give up some of their gloop; should you be vegan, use 60ml­ of olive oil in place of the butter.
If looking to keep things entirely vegan, obviously omit the optional 'nduja, as well as the cream - and be sure to use vegetable stock. I'd also personally omit the sugar, but that's up to you!
