That is why both - any added fats and flour (and all thickeners) are restricted in home canning. That pretty much eliminates any possibility of canning gravy. 2007年12月2日 · The flour lowers the acidity of the food, plus it makes the food thicker and more dense. The heat won't penetrate it properly to destroy botulism. If there is any oil or fat along with it, the oil will coat the food particles, which allows botulism to survive, even if the food is pressure canned. The combination can be deadly.

Freezing, on the other hand, is a major issue for all wet canned goods.
