I would honestly go to Taksim first as it’ll be a downhill and, presumably, easier walk for your parents. From Galata to the beginning of Istiklal Street requires a bit of uphill walking. So tram to Kabatas, funicular to Taksim, do İstiklal Street shopping, down to Galata tower.
